AVOCADO, ORANGE AND BEETROOT SALAD
1 Avocado, thickly sliced
2 Oranges, segmented
700g tinned baby beetroots, drained and halved (or fresh, roasted and peeled)
100g Rocket
1/4 cup Mint, roughly chopped
1/2 Spanish Onion, finely sliced
1 tbs Olive Oil
2 tsps Lemon Juice
Mix all ingredients and toss gently.
